We offer you two varieties of PDO Culatello of Zibello.
The Culatello del Consorzio di Zibello DOP degli Antichi Produttori del Culatello is a special Culatello produced in the PDOs area from a limited number of small historical producers who, besides being full members of the Consortium of Culatello, they still produce with the old methods. This variety of Culatello is produced as once, only in the coldest period of the year, from the 20th of October until the end of February.
The Culatello del Consorzio di Zibello DOP is produced in the PDO area by the remaining members of the Consortium of Culatello. The processing of the thighs is all year-round.
