A traditional specialty from San Secondo Parmense, with a sweet and delicate flavor and a soft, fragrant texture.
Obtained from the pork shoulder, it is deboned, trimmed, defatted and salted, then hand-tied and slowly steam-cooked with white wine and natural seasonings such as bay leaves, onion, garlic, and rosemary.
A true delicacy to be served warm or cold, bringing to the table the authentic taste of the Emilia region’s culinary tradition.
