A delicious soft cheese made of mixed milk, it has round and balanced, long-lasting  taste with intense and persistent hints of fresh milk and cooked butter, with slightly sour and pungent flavor. It is special eaten with acacia honey or diced fresh in salads.It happily marries with fruity and not particularly structured white wines.
Ripened for about 20-25 days, it’s a specialty of the dairy "Il Fiorino" since 1982. In each cheese "Il Fiorino" there are the most authentic flavors of Maremma. It’s not possible to obtain good cheese without handicraft  manufacturing. This is the philosophy followed by "Il Fiorino", which is able to combine the safety of modern technologies with the precious work of its workers. Every step is followed with the utmost care and each ingredient is absolutely natural. Milk, rennet, milk enzymes and salt. Nothing else.
It can be kept in refrigerator for many weeks. Once cut wrap it in a cling film and store in the fridge in an airtight container. Cheese must be taken out of the fridge at least 3 hours before serving it, unwrapped and stored at room temperature.

How to preserve it

In the refrigerator for some weeks. Once cut keep it in the fridge taking care to cover the cut with a cling film or an aluminum foil.
