The Blue one of the Moncenisio is produced in the small handicraft dairies of the Val of Susa.
Milk originates from local breedings. It is a cheese of bovine milk, seasoned for at least 45 days and characterized by blue erborinature to his/her inside.
Pasta is compact and elastic, very savory and pleasant. During the winter months the flocks browse in the lower lawns of mountain, while in the summer in those taller where they are fed of grass and flowers typical of the mountain. To the taste we have notes of wood, straw and walnut-trees, sustained by vegetable aromas.
Excellent combinings for Blue of the Moncenisio they are the Sauvignon or sweet dessert wines.
This cheese gourmet is clearly similar to the family of the French Bleus, but an evident difference is found in the fact that Italian cheese has a green tone while the veins of the French cheese are predominantly blue.
