Cheese made from cow’s milk, with a uniform and compact texture, which is softer under the rind and at the end of the maturing period and more crumbly in the centre. Its internal colour varies from white to straw-yellow, with a few tiny holes. It is characterized by a sweet flavour with a slight acid hint, slightly aromatic, and sometimes with truffle aftertaste; it has a distinctive smell.
Taleggio is a cheese with a Protected Designation of Origin (DOP in Italian) with a minimum maturation period is 35 days.
