The Emmental is a hard cheese, whose main feature is the large holes. These holes are due to pockets of carbon dioxide that is formed naturally during the phases of cheese ripening.
The flavor is slightly spicy and sour. In the kitchen, is used both in the sandwich, it is melted. Also it used in the fondue.
Emmentaler cheese is made from raw cow's milk. The cows are fed exclusively on grass and hay.
