Millesimato is ideal as a Table Cheese.Millesimato tastes really good: it’s a milder cheese, round, smooth, never pungent and aggressive, ideal to be eaten.
Excellent if served with vegetables and meat, optimum as an aperitif and finger food.

Millesimato is the Parmigiano-Reggiano cheese made with the best milk, the one produced from cows in the first 100 days following calving.

This milk is much more nourishing because of its high protein content. Once curdled, it spontaneously releases water, which is what makes it particularly suitable for the production of hard cheeses. The marked syneresis of the early lactation milk allows a good drying of the curd without cooking it too much, this enables the good bacteria to be selected. At Azienda Agricola Bertinelli all the products of its tilled fields are used for the feed of the livestock in the stable. The milk is used by the dairy for the production of Parmigiano Reggiano, all strictly controlled and guaranteed by certificates of Quality and Traceability. The company is part of the Parks and Reserves of Emilia Romagna, boasting organic certification for all crops. Ingredients cow's milk, salt, rennet.
Matching Fairly structured red wine. Unbeatable when it is grated on pasta, rice and soups, even the rind can be added to soups and cream of vegetable soups; it's excellent as a table cheese with its full and delicate flavour, it's great eaten alone or with vegetables and fruits such as pears, apples, figs, grapes, peaches, kiwi and nuts. To delight the most discerning palates it is delicious with the balsamic vinegar. Do not forget to enjoy it with an aperitif!
How to preserve it In the refrigerator for some months. Once opened keep it in the refrigerator for some weeks, wrapped in a cloth and closed in a plastic bag.
