Tortello literally means "small cake": it is, in fact, a fresh pasta wrapped over itself to contain a filling, then cooked in water and seasoned.
The “tortelli di erbetta” are made of fresh egg pasta with a rich, creamy and delicious filling made of fresh, cooked, freshly sliced and finely chopped beets, fresh ricotta cheese and grated Parmigiano-Reggiano cheese. It is a rectangular form of doughy paste filled only in the center because it does not open or break during cooking.
Once cooked in salt water, drain with the perforated ladle and place on the plate by sprinkling with melted butter flavored with sage and Grated Parmigiano Reggiano.
