A Tuscan Pecorino cheese P.D.O. loved and appreciated by the most demanding gourmets!
Delicious sheep’s milk cheese with a firm  structure and intense straw yellow color, tasty but mild with persistent aftertaste. The smell is intense with herbaceous notes and the aroma is herbaceous. It is special eaten with honey, apples, pears and figs or accompanied by excellent cold cuts. It happily marries with structured and well-persistent red wines with good alcoholic strength.

The Protected Designation of Origin for the Tuscan Pecorino was created to guarantee the consumer the excellence of raw materials and production processes through their connection with the territory. All stages of production of Tuscan Pecorino are made exclusively only in Tuscany and in some towns of Umbria and Lazio, starting from breeding of sheep that are fed mainly with green forage and hay from natural pasture of the area. Modern production technologies fused with the respect of a ancient tradition , give rise to a unique cheese, not replicable outside its production area, and we, the ones from Rocca Toscana Formaggi are proud to be among the members of the Consortium dairies for the Protection of Pecorino Toscano DOP, which guarantees the quality of the product under his unmistakable mark.

Ingredients: Pasteurized sheep's milk, salt, rennet and selected lactic coltures.Natural untreated rind, not edible. It can be kept in refrigerator for many weeks. Once cut wrap it in a cling film and store in the fridge in an airtight container. Cheese must be taken out of the fridge at least 3 hours before serving it, unwrapped and stored at room temperature. To be eaten without the rind.

How to preserve it

In the refrigerator for some weeks. Once cut keep it in the fridge taking care to cover the cut with a cling film or an aluminum foil.
