Located at the foot of the Modena hills, the ACETAIA LA BONISSIMA vinegar distillery holds custody of the traditional family methods and recipes used for the production of Balsamic Vinegar of Modena PGI. At the start of the 1900's, the De Pietri family owned and managed one of the most renowned inns of the city: the "Casa Rigata" where two of Modena's great passion shared equal importance: Balsamic Vinegar was one and racing cars was the other. Of that magic historic period remains not only the Modena's people memory because the old Vinegar Distillery has still existed throughout the generation and continues to produce an excellent Balsamic Vinegar today. The husband and wife team of Franco and Donatella De Pietri is heir to this precious tradition, and with their entrepreneurial spirit they have known how to put it to use to realize a company that continues with the production of Balsamic Vinegar of Modena PGI.
The ACETAIA LA BONISSIMA vinegar distillery is located in Casinalbo at the foot of Appennines and just seven kilometers from the center of Modena that is the territory of the grapevines used for centuries for the production of wine must for Balsamic Vinegar of Modena PGI.
The company complies with H.A.C.C.P. standards of independent quality checking system throughout the entire processing cycle using packaging technologies that are extremely modern and that comply in all respect with hygienic standards. The company's traditions, environment and philosophies are the basis behind the idea of the trademark: "LA BONISSIMA". It is the name of a small statue, one of the most important symbol for Modena's people, located in the corner of the building that houses the Modena City Comune, in front of the piazza on which the Ancient Roman Duomo sits. La Bonissima, as it is known by Modena's people, seems to represent a lady who, according to some, held a balance as a symbol of the exactness of weights, measurements and the good quality of goods. Others say that, in a period of great famine which struck the city of Modena, she guaranteed the survival of the poor and impoverished by donating grain and supplies in large quantities. As such, this statue was erected in the 13th century as a memorial and since then has become one of the city's most loved symbols.
