Asiago cheese is a dairy product obtained from cow’s milk, semi-cooked, with protected designation of origin. Today, Asiago is the fourth DOP cheese from cow’s milk in our country by quantity produced.

Asiago cheese is basically produced in two different types, namely: pressed (fresh) and ripened (aged).
Pressed Asiago is produced using whole milk. It has a thin and elastic rind, while inside it has a soft, buttery texture, white or slightly straw-yellow in colour and with irregular holes. It has a sweet and delicate flavour, reminiscent of cream and freshly collected milk. Excellent as a table cheese, it is also extremely suitable for a large number of recipes. Due to its delicacy, fresh Asiago requires equally delicate wines, fresh and light whites or soft and light rosés. If served as an aperitif, it can also be matched with dry sparkling wines. Some examples: Valpolicella Classico, Vernaccia di San Gimigniano, Biferno rosé, Franciacorta spumante brut (sparkling).

How to preserve it It must be perfectly cut, and the slices wrapped in film and stored at temperatures of 8-9° C. Fresh Asiago keeps less than ripened Asiago, so it should be used within a shorter period.
