It is smaller and thinner than the Culatello. You can easily cut it and taste it whenever you want. The Fiocchetto is made from the muscular hind legs of the pig. A careful salting and a long natural aging in the cellar give to the Fiocchetto a sweet and delicate taste. Cut it into thin slices and enjoy it with a nice young red wine!
