Outside is all black. Inside it has a white heart, inviting and tasty. The Cacionerone is a hard cheese quite unique. It is made largely from cow's milk together with a small amount of buffalo milk. The minimum maturation time is 24 months, the time necessary for the milk to become one of the finest table cheeses of Italy.
