Description
Spongata is a traditional Christmas cake with roots in Emilia and Tuscany. An ancient-tasting, rich and fragrant dessert, perfect for celebrating the holidays with an authentic, traditional flavour.
It consists of a pastry base similar to shortcrust, enclosing a generous filling of apple and pear jam, candied fruit, pine nuts and almonds. Everything is covered with a second layer of pastry, finely pierced for even baking, and shaped with the classic wooden mould that gives it its characteristic appearance.
The Spongata “Del Nonno” is artisanally produced and packaged in Corniglio, faithfully following the traditional recipe, and has been recognised as a typical product by the Italian Ministry of Agricultural, Food and Forestry Policies.
