It is rare to find and to be able to taste a spallaccio, but when it happens it would never be stopped tasting him/it.
Only the pigs raised with natural foods, without hurry, and that after one year and a half they come to weigh over 200 kg they are proper for the production of the spallaccio; for this the same pigs are used destined to the production of the well more famous Ham, having meats more mature and firm and fat than coverage of elevated thickness, from the extremely sweet tastes.
The spallaccio is a meat of the tradition of our grandparents, drawn by the anterior leg of the heavy pig padano, trimmed, salty, massaged and submitted to seasoning in its hide for at least 18 months, in wine cellars from the checked damp. The slice must be cut to knife, dark red results, interposed by thin striations of fat and it is particularly fragrant and perfumed with an intense and deep taste.
