This cheese, the richest in nutrients, is brittle and granular. Its taste is more sharp and complex in aromas, but at the same time La Campanella Parmigiano-Reggiano is sweet and not spicy.
Parmigiano-Reggiano is also suitable for lactose-intolerant peopleIn fact, lactose disappears during the early hours of the product life because it is transformed into lactic acid, which is one of the cornerstones of the peculiar production process.
The above has been demonstrated through a series of analyses which revealed that the concentration of lactose found was estimated within a range between "unmeasurable" 0:39 mg/100 g equivalent to 0.1 mg/100 kcal: consequently, Parmigiano Reggiano can be called without a doubt a lactose-free food.

The history of LA CAMPANELLA FORMAGGI SRL dates back to the 20th century, when the PASQUALI family, who had been running a small warehouse on lease, began to search for the true HIGH MOUNTAIN Parmigiano Reggiano DOP, focusing immediately on the highest quality of the raw material. Later on, the Pasquali family carefully followed the ageing of the wheels in their warehouse and, once the quality standard desired had been reached, they sold the cheese first in the local markets, then gradually also to shops and restaurants. With the passing of years, LA CAMPANELLA FORMAGGI had become a reference brand and synonym with excellence for lovers of Parmigiano Reggiano, so much so that the Pasquali family had to leave their small warehouse and move to their current premises, which can house up to 10 thousand wheels of Parmigiano Reggiano. The new headquarters, however, remain linked to the territory of origin because the geographical area is itself synonymous with and a guarantee of the quality of Parmigiano Reggiano: in the area of the Parma Food Valley, La Campanella Formaggi has been handing down for generations the noble secrets and ancient methods of cheese ageing, which enhance the organoleptic characteristics of their products with protected designation of origin (DOP). Today, LA CAMPANELLA FORMAGGI can claim to be a leading brand in the field of ageing and sale of Parmigiano Reggiano.

LA CAMPANELLA FORMAGGI means TRADITION, SELECTION and QUALITY

La Campanella Formaggi, headquartered in the Parma countryside, ages the best High Mountain PARMIGIANO-REGGIANO DOP according to the ancient ageing techniques and brings it on the tables of Italians, who are fond of flavourful and tasty Parmigiano Reggiano. The key principles underlying both the production process and the selection of retailers of its products help to maintain the high quality standard that distinguishes La Campanella Formaggi:
TRADITION. The Pasquali family has been handing down for over three generations the noble secrets and ancient methods of ageing that best enhance the organoleptic characteristics of their Parmigiano Reggiano DOP.
SELECTION. The owners personally choose only HIGH MOUNTAIN produce and provide various and much-prized ageing degrees ranging from 18 months to over 40 months.(“We let time mark the slow ageing process of our wheels.”)
QUALITY. La Campanella Parmigiano Reggiano is distinguished by its tiny granular texture that splits into slivers and a fragrant and delicate aroma. The unmistakable quality of this Parmigiano Reggiano also derives from the climatic characteristics of the area where the headquarters of La Campanella is located: in the very heart of Verdi’s lands, just a few metres from the prestigious Rocca S. Vitale of Fontanellato, in an area rich in culture and known worldwide for the art and love for its culinary tradition.
Parmigiano Reggiano can be called the King of the Italian and International table.

“The senses wake up at first cut…At the sight of its milk-white texture, smell and taste; its scent, its flavour….” Taken from “The Decameron”, 1348 by Boccaccio
